Lime Rice or Lemon Rice is a very balanced ayurvedic dish. It balances all three doshas viz., Vata, Pita and Kapha.


Basmati rice – 1 cup
Urad dal or mung dal – 1 tbsp
Water – 2 cups
Fresh lime juice – 1 tbsp
Mustard seeds – 1/2 tbsp
Turmeric powder – 1/2 tbsp
Hing – 1 pinch
Whole cumin seeds – 1 tbsp
Ghee – 2 tbsp
Coriander Leaves – 1 tbsp
Grated coconut – 2 tbsp
Salt – To taste


Cook Basmati Rice along with Urad dal in water for 10 to 12 minutes. In a pan, melt the ghee and saute the spices in this melted ghee. Mix the cooked rice and sautéed spice mix together along with lime juice. Add salt to taste. Decorate the dish with coriander leaves and grated coconut before serving
